Pasta Marinara and Pan Seared Scallops
A simple yet yummy way to end your weekend. Making marinara sauce is a good way to save those very ripe tomatoes in your fridge. Just freeze ‘em up in batches and thaw as needed.
2 tbs unsalted butter
4 medium sized tomatoes (I froze the extra tomato sauce)
6 gloves garlic
1 small onion (optional)
3 tbs extra virgin olive oil
Dried herbs (I used oregano and basil)
salt and pepper
